Danish Apple Pizza!
Crust
4 cups flour
2 tsp. salt
1 1/2 cups shortening
8 Tbsp. ice water
1. Combine flour and salt in large bowl. With pastry blender or two knives, cut in shortening until little balls the size of peas are formed. Sprinkle water evenly over flour/shortening mixture and working quickly, mix lightly with a fork until all flour is moistened.
2. Gather dough together with fingers so it cleans the sides of the bowl. Press gently into a ball. Divide dough into two equal balls.
3. Sprinkle board lightly with flour. Place one ball of dough on surface and roll out to a 14 1/2” circle. Roll lightly in all directions from the center out. Loosen pastry from board with straight edge spatula. Fold over rolling pin and place into pizza pan. (An easier method is to roll the pastry out on top of waxed paper, do not flour the board first, instead wipe it with a moistened cloth to hold the waxed paper down, and use the paper to pick up the dough and turn it over so paper is on top, place dough on the pizza pan and remove the waxed paper.)
4. Clean rolling surface and roll out the second half of dough, using the same procedure as the first half. Complete the filling on the first crust. Place second crust over the filling and seal the edges. Slit the top crust in several places in a decorative manner to allow steam to escape during baking. Top can also be decorated by rerolling scraps, cutting them out with cookie cutters, and placing cut-outs on top of crust. Bake at 350° for 45 minutes or until golden brown.
Filling
2 21oz. cans Cinnamon Spice Apple Pie Filling, or fresh sliced, pealed apples
1 cup corn flakes
1/2 cup sugar
2 tsp. cinnamon
1 Tbsp. butter
1/2 cup chopped walnuts, optional
1. Crush the corn flakes in your hand, not too fine, and sprinkle over bottom crust. Spread apple pie filling evenly over corn flakes, about 3/4 inch deep. Sprinkle nuts over apples. Mix sugar and cinnamon and sprinkle evenly over apples. Dot with butter. Put the top crust on, trim the edges, and crimp to seal. Bake as directed above.
Glaze
2 Tbsp. soft butter
1 tsp. hot water
1 Tbsp. lemon juice
powdered sugar to make glaze consistency (about 2 cups)
1. When pizza is cool, mix liquids, then blend in powdered sugar with whisk or fork until smooth and correct consistency. Drizzle over crust.
